Crunchy & Chunky Chicken Salad Sandwich Recipe

There are times that we run out of ideas what to cook and eat, specially for breakfast. And sometimes we tend to just buy outside or have food delivered just to satisfy our hunger.

Then usually, we live far from restaurants, or they’re not easily accessible.

When things comes on this stage, I tend to be more creative in the kitchen.

Today, I was craving for a crunchy chicken sandwich and I didn’t have an idea where to get one fast! But all I know is I have some ingredients inside my refrigerator to one – so I did.

Ingredients for my Recipe of Crunchy Chicken Salad Sandwich:

  • 1 Chicken breast
  • A spoonful of chopped onion leaves
  • 4 tablespoons of Mayonnaise lite
  • Salt and pepper
  • 3 tablespoons of peeled chopped cucumber
  • 2 cups of water for boiling chicken breast

Procedure of Crunchy Chunky Chicken Salad Sandwich Recipe:

  • On a small casserole, boil chicken breast for at least 15 minutes together with a teaspoon of rock salt and ground black pepper on medium fire.
  • Turn off fire when done and let it cool on its broth for another 15 minutes
  • Take off skin and shred the white meat using 2 forks
  • Let it cool again and place it on a bowl and cover and refrigerate it overnight.

Note:
I let the shredded chicken meat cool first so that the mayo won’t become runny and for the chicken to have a more chunky texture.

The next day:

  • Fold chilled chicken white meat into the mayonnaise with a dash of pepper and salt, chopped onion leaves (depending on your taste) plus the chopped cucumbers and set aside.
  • Warm 8 slices of loaves to the oven (do not toast)
  • Put the chicken spread on the bread and enjoy the Crunchy Chunky Chicken Salad Sandwich!

The Crunchy Chunky Chicken Salad Sandwich can make 4 or more sandwiches, good for two people.  You can make use mayo lite and wheat or sugar-free slices loaves if you are on a diet.
